Instructions
- 1
Preheat the oven to 200 °C / 400 °F. Lightly grease a baking tray or line it with parchment paper and brush it with the olive oil.
- 2
Finely chop the fresh spinach and place it in a large bowl with the well-drained cooked sweet corn, ricotta, beaten egg, breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, and salt.
- 3
Mix everything well with a spoon until you get a moist but shapeable mixture. If it feels too soft, add a little more breadcrumbs, 1 tablespoon at a time.
- 4
With lightly damp hands, shape 12 small round or oval bites and place them on the prepared tray, leaving a little space between them.
- 5
Bake for 18 to 20 minutes at 200 °C / 400 °F, until the cloud bites are set and golden on top.
- 6
Let them rest for 5 minutes before serving so they firm up and are easier to hold. Serve warm.
Chef tips
For a softer texture, you can lightly mash half of the corn before mixing. If you want a more playful shape, use a small scoop to portion even mounds.
Substitutions
You can swap ricotta for well-drained curd cheese or blended cottage cheese. Spinach can be replaced with very finely chopped cooked Swiss chard. Parmesan can be replaced with another aged grated cheese.
