Instructions

  1. 1

Preheat the oven to 200 °C / 400 °F and lightly grease a baking tray or line it with parchment paper brushed with a little olive oil.

  2. 2

Place the grated zucchini in a clean towel and gently squeeze out excess moisture. Transfer it to a large bowl.

  3. 3

Add the ground turkey, quick oats, shredded mozzarella cheese, lightly beaten egg, grated carrot, onion, garlic powder, dried oregano, salt, black pepper, and 1 tablespoon olive oil to the bowl.

  4. 4

Mix very well with a spoon or clean hands until evenly combined. Let the mixture rest for 5 minutes so the oats can absorb some of the moisture.

  5. 5

Shape the mixture into 16 round or oval bites, like little clouds, and place them on the tray with a bit of space between each one.

  6. 6

Bake for 16 to 18 minutes at 200 °C / 400 °F, or until fully cooked inside and golden outside.

  7. 7

Meanwhile, place the tomato puree and water in a small saucepan. Warm over low heat for 3 to 4 minutes, stirring until the sauce is smooth and gently heated.

  8. 8

Serve the clouds warm with a small spoonful of tomato sauce on top or on the side for dipping.

Chef tips

For a softer texture, pulse the oats briefly before mixing. If you want a more even shape, use a small cookie scoop. Let them rest for 2 minutes after baking so they hold together better.

Substitutions

You can replace the mozzarella with any mild shredded melting cheese. The carrot can be swapped for grated pumpkin. If you prefer not to use onion, leave it out and add 1 extra tablespoon of well-drained zucchini.
