Instructions

  1. 1

    1. Preheat the oven to 200 °C / 400 °F. Lightly grease a baking tray with 1 teaspoon of the olive oil or line it with parchment paper.

  2. 2

    2. Steam the cauliflower for 8 minutes, until tender. If using fresh or frozen sweet corn, cook it for 3 minutes in hot water or steam, then drain well.

  3. 3

    3. Finely chop the cooked cauliflower and sweet corn, or lightly mash them with a fork to get a small-textured mixture, but not a complete puree.

  4. 4

    4. In a bowl, combine the cauliflower, sweet corn, shredded mozzarella cheese, beaten egg, breadcrumbs, onion powder, salt, black pepper, and the remaining teaspoon of olive oil.

  5. 5

    5. Mix well until you have a moist mixture that can be pressed together with your hands. Let it rest for 3 minutes so the breadcrumbs can absorb some of the moisture.

  6. 6

    6. Shape 12 small round or oval bites with your hands and place them on the prepared tray, leaving a little space between each one.

  7. 7

    7. Bake for 18 to 22 minutes at 200 °C / 400 °F, until the clouds are set and golden on the surface.

  8. 8

    8. Remove from the oven and let them cool for 5 minutes before serving so the cheese can settle and the bites hold their shape better.

Chef tips

If the mixture feels too wet, add 1 to 2 extra tablespoons of breadcrumbs. For a softer texture for younger children, chop the cauliflower and corn very finely before mixing.

Substitutions

You can swap the mozzarella for Monterey Jack or another mild melting cheese. The corn can be replaced with finely chopped peas. For a gluten-free version, use gluten-free breadcrumbs.
