Instructions
- 1
Preheat the oven to 200 °C / 400 °F. Lightly grease a baking tray or line it with parchment paper and brush it with a little of the olive oil.
- 2
In a large bowl, mix the ground turkey, cooked white rice, finely grated carrot, shredded mozzarella cheese, egg, breadcrumbs, onion powder, garlic powder, salt and black pepper. Stir with a spoon or clean hands until well combined.
- 3
If the mixture feels too wet, add a little more breadcrumbs, 1 tablespoon at a time, until you can shape soft balls that hold together.
- 4
Shape 8 teddy bears: for each one, take a portion of the mixture for the body and make a slightly flattened ball. Add one small ball for the head and four even smaller balls for the ears and paws, pressing gently so they stick together. Place each teddy on the prepared tray.
- 5
Brush the tops of the teddy bites with the remaining olive oil to help them brown evenly.
- 6
Bake for 16 to 18 minutes at 200 °C / 400 °F, or until the teddy bites are firm, lightly golden and the turkey is fully cooked through.
- 7
While they bake, make a quick sauce by mixing the thick plain yogurt with the tomato puree and chopped parsley in a small bowl until smooth and lightly pink.
- 8
Let the teddy bites rest for 3 minutes before serving. Serve warm with the yogurt, tomato and parsley sauce on the side or spooned over the top.
Chef tips
For easier shaping, lightly dampen your hands while forming the teddy bears. If the rice was cooked the day before, the mixture will be firmer and easier to shape.
Substitutions
You can swap the mozzarella for mild cheddar or shredded Oaxaca-style cheese. Parsley can be replaced with finely chopped chives. If you do not have tomato puree, use a small amount of thick smooth tomato sauce.
