Instructions

1. Season the snapper fillets with 1 teaspoon ground black lime, 1 teaspoon salt, and 1/2 teaspoon black pepper. Let them rest for 10 minutes while you prepare the sides.
- 2
2. Place the kohlrabi on a tray and toss it with 1 tablespoon olive oil, a pinch of salt, and a pinch of pepper. Roast at 400°F / 200°C for 20 minutes, until tender and lightly golden.
- 3
3. Meanwhile, heat 1 tablespoon olive oil in a saucepan over medium heat. Sauté the white onion for 4 minutes, add the garlic, and cook 1 minute more. Add the roasted kohlrabi and vegetable broth, cook for 3 minutes, then blend with the Greek yogurt and butter until smooth. Adjust with a little more salt and pepper if needed. Keep warm.

4. For the warm salad, heat 1 tablespoon olive oil in a skillet over medium heat. Add the shallot and cook for 2 minutes. Add the peas and sauté 2 minutes more. Pour in the white wine and let it reduce for 1 minute. Stir in the fresh mint, fresh parsley, lemon juice, lemon zest, 1/4 teaspoon salt, and the remaining black pepper. Keep warm.
- 5
5. Heat the remaining tablespoon of olive oil in a large skillet over medium-high heat. Cook the snapper fillets for 3 to 4 minutes on the first side and 2 to 3 minutes on the second side, until golden and just cooked through. If you prefer to finish them in the oven, transfer for 2 minutes at 375°F / 190°C.
- 6
6. Sprinkle the remaining ground black lime over the freshly cooked fish. Serve a base of kohlrabi cream, place a snapper fillet on top, and finish with the warm pea and shallot salad.
- 7
7. Serve immediately to preserve the silky texture of the cream, the contrast of the golden fish, and the freshness of the herbs.
Chef tips
Pat the fish dry before searing for better color. If the cream becomes too thick, loosen it with 1 or 2 extra tablespoons of hot broth before serving.
Substitutions
You can use red snapper, sea bass, or hake instead of snapper. Kohlrabi can be replaced with turnip or parsnip for a different profile. If you prefer not to use white wine, replace it with the same amount of vegetable broth plus a few extra drops of lemon juice.
