Instructions

  1. 1

    1. Preheat the oven to 220 °C / 425 °F. Line a baking sheet with parchment paper or lightly grease it with olive oil.

  2. 2

    2. Place the green cabbage and half of the shallot on the baking sheet. Add 2 tablespoons olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Toss well and roast for 20 minutes at 220 °C / 425 °F, until the cabbage is tender with browned edges.

  3. 3

    3. While the cabbage roasts, make the crust. In a food processor, pulse the chickpeas, parsley, half of the dill, 2 garlic cloves, 1 teaspoon lemon zest, 1 tablespoon lemon juice, 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper until the mixture is coarse, moist, and able to be pressed onto the fish.

  4. 4

    4. Pat the fish fillets dry with paper towels. Place them on a separate baking dish or sheet, rub with 1 tablespoon olive oil, and season with the remaining salt, pepper, and lemon zest. Press the chickpea mixture onto the top of each fillet.

  5. 5

    5. Once the cabbage has roasted for 20 minutes, reduce the oven temperature to 210 °C / 410 °F. Put the fish in the oven and bake for 10 to 12 minutes at 210 °C / 410 °F, until just cooked through and the crust is set and lightly golden.

  6. 6

    6. Transfer the roasted cabbage and roasted shallot to a blender. Add 1 garlic clove, the vegetable broth, Greek yogurt, and 1 teaspoon lemon juice. Blend until smooth and silky. Taste and adjust with salt and pepper. If you want to serve it hot, warm it gently in a saucepan over low heat for 2 to 3 minutes without boiling.

  7. 7

    7. For the warm salad, heat the last tablespoon of olive oil in a skillet over medium heat. Add the remaining shallot and cook for 1 minute. Add the cucumber and sauté for 2 to 3 minutes so it warms through but keeps its texture. Stir in the remaining dill, sunflower seeds, and the last tablespoon of lemon juice. Season with a pinch of salt and pepper.

  8. 8

    8. Spoon a bed of roasted cabbage cream onto each plate. Set a chickpea-crusted fish fillet on top and finish with the warm cucumber dill salad on the side.

  9. 9

    9. If desired, let the fish rest for 2 minutes before serving to help retain its juices.

Chef tips

Dry the chickpeas and fish very well so the crust adheres better and turns crispier. If your blender needs more liquid for the cream, add 1 to 2 extra tablespoons of broth.

Substitutions

You can use hake, fresh cod, or thick tilapia fillets. Greek yogurt can be replaced with lactose-free plain yogurt for a similar texture. Sunflower seeds can be swapped for pumpkin seeds if you want a different flavor profile.
