Toast the kañihua in a dry skillet for 2 minutes before using to deepen its flavor. Do not overcook the fish so it stays juicy.
Substitutions
You can replace kañihua with puffed quinoa or very dry toasted cooked quinoa. Fennel can be replaced with thinly sliced celery, although the flavor profile will change. If fresh cheese is unavailable, use firm crumbled ricotta.
