Instructions

  1. 1

    1. Season the turkey with the salt, black pepper, cumin, and half of the minced garlic. Let it rest for 10 minutes while you prepare the remaining ingredients.

  2. 2

    2. Heat the vegetable oil in a wide pot over medium heat. Brown the turkey pieces for 6 to 8 minutes, turning them so they color on several sides. Remove and set aside.

  3. 3

    3. In the same pot, add the red onion and cook for 4 minutes until softened. Add the remaining minced garlic, ají amarillo paste, and ají panca paste; cook for 2 minutes, stirring so the paste cooks without burning.

  4. 4

    4. Add the tomato wedges and red bell pepper strips. Cook for 3 more minutes until the tomatoes begin to release their juices.

  5. 5

    5. Pour in the chicha de jora and the stock. Scrape the bottom of the pot to loosen the browned bits. When it comes to a gentle boil, return the turkey to the pot.

  6. 6

    6. Add the thick slices of yellow potatoes. Cover and cook over medium-low heat for 20 minutes, keeping a gentle simmer.

  7. 7

    7. Stir in the cooked lima beans and cook 10 minutes more, or until the turkey is tender and the potatoes are cooked through but still holding their shape. If you want a more concentrated sauce, uncover the pot for the last 5 minutes.

  8. 8

    8. Turn off the heat and add the chopped mint, chopped cilantro, and lime juice. Taste and adjust with more salt if needed.

  9. 9

    9. Serve the stew hot with cooked white rice. If needed, keep it warm over very low heat or in a 200 °F / 95 °C oven for up to 15 minutes.

Chef tips

For deeper flavor, you can marinate the turkey with the salt, pepper, cumin, garlic, and ají amarillo for 30 minutes in the refrigerator before cooking. Use cooked but firm lima beans so they do not fall apart in the sauce.

Substitutions

You can replace the turkey with chicken pieces. If you cannot find chicha de jora, use half mild lager and half extra stock, although the flavor profile will change. Mint can be substituted with a milder fresh mint in a slightly smaller amount.
