Instructions

  1. 1

    1. Preheat the oven to 200 °C / 400 °F and lightly grease a baking sheet or line it with parchment paper brushed with a little olive oil.

  2. 2

    2. In a medium bowl, mash the ripe banana until smooth. Add the egg, plain yogurt and olive oil, and mix well.

  3. 3

    3. Stir in the quick oats, finely grated carrot, shredded mozzarella cheese, ground cinnamon, baking powder and salt. Mix until a thick, even batter forms. Let it rest for 5 minutes so the oats can absorb some of the moisture.

  4. 4

    4. Using a spoon, make 12 small mounds on the baking sheet and gently flatten them into round shapes.

  5. 5

    5. Bake at 200 °C / 400 °F for 18 to 20 minutes, or until the rounds are set and lightly golden on top and around the edges.

  6. 6

    6. Remove from the oven and let cool for 5 minutes before serving. They can be served warm or at room temperature.

Chef tips

For a more even texture, you can pulse the oats for a few seconds before mixing. If the batter feels too wet because of a larger banana, add 1 or 2 extra tablespoons of oats.

Substitutions

You can use mild Oaxaca cheese or another mild shreddable cheese instead of mozzarella. Plain yogurt can be replaced with plain Greek yogurt in the same amount.
