Instructions

1. Preheat the oven to 200 °C / 400 °F and lightly grease a baking tray with 1 teaspoon of the olive oil.
- 2
2. Cook the sweet potato in boiling water for 10 to 12 minutes, until very tender. Drain well and mash until smooth; let it cool for 5 minutes.
- 3
3. Meanwhile, heat a skillet over medium heat with the remaining teaspoon of olive oil. Add the ground turkey and cook for 5 to 6 minutes, breaking it up, until no longer pink. Remove from the heat and let it cool slightly.
- 4
4. In a large bowl, mix the sweet potato mash, cooked turkey, grated carrot, ground oats, egg, onion powder, garlic powder, parsley, salt, and 60 g (2 oz) of the shredded mozzarella cheese.
- 5
5. Mix very well until you have a soft, shapeable mixture. If it feels too wet, let it rest for 3 minutes so the oats can absorb some moisture.
- 6
6. Take small portions and shape them into little wheels or thick discs about 5 cm (2 inches) wide. Place them on the prepared tray.
- 7
7. Sprinkle the remaining 20 g (1 oz) of shredded mozzarella cheese on top.
- 8
8. Bake for 12 to 14 minutes at 200 °C / 400 °F, until the wheels are set and lightly golden on the bottom.
- 9
9. Let them rest for 5 minutes before serving so they hold their shape better and cool to a child-friendly temperature.
Chef tips
For a more even texture, grate the carrot very finely. If you want a more playful shape, gently press the center of each wheel with the back of a spoon to create a button-like look.
Substitutions
You can swap the mozzarella for Monterey Jack or another mild melting cheese. The ground oats can be replaced with fine breadcrumbs if you do not need a gluten-free version.
