Instructions

  1. 1

    1. Preheat the oven to 200 °C / 400 °F. Line a baking tray with parchment paper and brush it with 1 teaspoon of the olive oil.

  2. 2

    2. In a large bowl, mix the ground turkey, pumpkin puree, ground oats, shredded cheddar cheese, beaten egg, grated onion, garlic powder, sweet paprika, and salt until evenly combined.

  3. 3

    3. Divide the mixture into 8 equal portions. With lightly damp hands, shape each portion into a short rope and join the ends to make little wheels. Place them on the prepared tray.

  4. 4

    4. Brush the wheels with the remaining teaspoon of olive oil to help them brown gently.

  5. 5

    5. Bake for 16 to 18 minutes at 200 °C / 400 °F, until the wheels are firm and the turkey is fully cooked inside.

  6. 6

    6. While they bake, make the dip by stirring together the plain yogurt, finely grated carrot, and lemon juice in a small bowl until creamy.

  7. 7

    7. Let the wheels rest for 3 minutes out of the oven before serving. Serve with the yogurt and carrot dip.

Chef tips

If the mixture feels too wet, add 1 or 2 extra tablespoons of ground oats. For a fun presentation, serve each wheel cut in half to show the orange and golden center.

Substitutions

You can swap the cheddar for shredded mozzarella. The pumpkin can be replaced with sweet potato puree in the same amount. If you do not have fresh onion, use an extra 1/4 teaspoon garlic powder and omit the onion.
