Instructions

  1. 1

    1. Preheat the oven to 200 °C / 400 °F and lightly grease a baking tray or line it with parchment paper.

  2. 2

    2. Place the rolled oats in a blender or food processor and pulse until you get a coarse flour.

  3. 3

    3. In a bowl, mix the ground oats, grated carrot, mozzarella cheese, chives, garlic powder, sweet paprika, and salt.

  4. 4

    4. Add the beaten egg, plain yogurt, and olive oil. Mix well until a moist, shapeable dough forms.

  5. 5

    5. Divide the mixture into 8 equal portions. With slightly damp hands, shape small compact roll-ups or cylinders.

  6. 6

    6. Place the roll-ups on the prepared tray, leaving a little space between each one.

  7. 7

    7. Bake for 18 to 20 minutes at 200 °C / 400 °F, until firm and lightly golden on the outside.

  8. 8

    8. Remove from the oven and let rest for 5 minutes before serving so they hold their shape better.

Chef tips

For a softer texture, let the mixture rest for 5 minutes before shaping, so the oats can absorb some of the moisture.

Substitutions

You can swap the mozzarella for a mild shredded cheese such as Oaxaca or Monterey Jack. Chives can be replaced with finely chopped parsley.
