Instructions

  1. 1

Preheat the oven to 200 °C / 400 °F and line a baking tray with parchment paper or lightly grease it.

  2. 2

Cook the potato in water until tender, about 10 to 12 minutes. Drain well and mash into a thick puree.

  3. 3

Meanwhile, steam or boil the broccoli for 3 to 4 minutes until tender. Drain very well and chop even more finely if needed.

  4. 4

In a large bowl, combine the mashed potato, broccoli, cooked chicken breast, shredded mozzarella cheese, beaten egg, breadcrumbs, garlic powder, salt, and black pepper.

  5. 5

Mix well until you get a moldable mixture. If it feels too wet, add a little more breadcrumbs.

  6. 6

Take small portions and shape them into compact little roll-ups about the size of a short finger. Place them on the prepared tray.

  7. 7

Brush the roll-ups with olive oil so they brown evenly.

  8. 8

Bake for 12 to 15 minutes at 200 °C / 400 °F, turning halfway through, until firm and lightly golden on the outside.

  9. 9

Let them rest for 3 minutes before serving so they hold their shape better.

Chef tips

For a softer texture for younger children, chop the chicken and broccoli very finely. You can also make them smaller for bite-sized portions.

Substitutions

You can swap the mozzarella for another mild shredded cheese. Broccoli can be replaced with cooked, well-drained cauliflower. For a gluten-free version, use gluten-free breadcrumbs.
