Instructions

1. Preheat the oven to 190 °C / 375 °F and lightly grease a fun-shaped silicone mold or a mini muffin pan with a little olive oil.
- 2
2. Place the cooked sweet corn kernels in a processor and pulse briefly, leaving some texture visible so the bites stay tender and easy to chew.
- 3
3. In a medium bowl, mix the ricotta, beaten egg, grated apple, olive oil, and ground cinnamon until smooth and creamy.
- 4
4. Add the pulsed corn, oat flour, shredded mozzarella, baking powder, and salt. Mix well until a thick, moist batter forms.
- 5
5. Divide the mixture among 12 mold cavities, filling almost to the top and smoothing the surface with a spoon.
- 6
6. Bake for 16 to 18 minutes at 190 °C / 375 °F, or until the little suns are set, puffed, and lightly golden around the edges.
- 7
7. Let them rest for 5 minutes out of the oven before unmolding so the ricotta and mozzarella can settle and the bites hold their shape better.
- 8
8. Serve warm or at room temperature. If desired, pair with fruit sticks or soft vegetables for a playful presentation.
Chef tips
For a smoother texture for younger children, process the apple together with the corn as well. If using a silicone mold, place it on a rigid baking tray for better stability.
Substitutions
You can replace the mozzarella with the same weight of another mild shredded cheese. The apple can be swapped for well-drained grated pear. Oat flour can be made by blending oats into a fine powder.
