Instructions
- 1
Preheat the oven to 200 °C / 400 °F and lightly grease a baking tray or line it with parchment paper.
- 2
In a large bowl, mix the ground chicken, finely grated carrot, quick oats, shredded mozzarella cheese, beaten egg, olive oil, onion powder, garlic powder, salt, and chopped parsley.
- 3
Stir with a spoon or clean hands until you have an even mixture. Let it rest for 5 minutes so the oats can absorb some of the moisture.
- 4
Shape 12 small round portions, like mini suns or thick little patties, and place them on the tray with a little space between each one.
- 5
Bake for 16 to 18 minutes at 200 °C / 400 °F, until the bites are lightly golden on the outside and the chicken is fully cooked inside.
- 6
Let them rest for 3 minutes before serving so the cheese can settle and the bites hold their shape better.
- 7
Serve warm, on their own or with a mild side children enjoy.
Chef tips
If the mixture feels too wet because of the egg size or the carrot moisture, add 1 or 2 extra tablespoons of oats. For a more even shape, lightly moisten your hands before shaping the bites.
Substitutions
You can swap the mozzarella for another mild shredded cheese. Parsley can be replaced with very finely chopped chives. If you do not have quick oats, pulse old-fashioned oats briefly.
