Instructions
- 1
Preheat the oven to 200 °C / 400 °F and lightly grease a baking tray or line it with parchment paper.
- 2
Place the grated zucchini in a clean towel and squeeze out some of the moisture. Transfer it to a large bowl and add the finely grated carrot.
- 3
Add the shredded mozzarella cheese, all-purpose flour, baking powder, garlic powder, and salt to the bowl. Mix well to distribute the dry ingredients evenly.
- 4
Add the egg, plain yogurt, and olive oil. Stir with a spoon until you get a thick, slightly sticky dough with no dry flour remaining.
- 5
Divide the dough into 8 equal portions. With lightly oiled hands, shape each portion into a short rope, then gently twist it to create a simple braid-like shape.
- 6
Place the twists on the prepared tray, leaving a little space between them.
- 7
Bake for 16 to 18 minutes at 200 °C / 400 °F, until the twists are golden around the edges and firm to the touch.
- 8
Let them rest for 5 minutes before serving so the cheese can set and the twists are easier to hold.
Chef tips
For a softer texture for younger children, grate the zucchini and carrot on the fine side of the grater. You can also make smaller twists for snack time or lunchboxes.
Substitutions
You can replace the mozzarella with Monterey Jack or another mild semi-soft melting cheese. Plain yogurt can be replaced with plain Greek yogurt in the same amount.
