1. In a small saucepan, combine the sugar with 125 ml (1/2 cup) of the water. Heat over medium heat until the sugar fully dissolves, about 3 to 5 minutes. If using a thermometer, do not let it go above 185°F (85°C). Remove from the heat and let it cool for 5 minutes.

2. Place the pear, celery, lemon juice, dill, salt, the warm syrup, and the remaining 125 ml (1/2 cup) water in a blender. Blend until very smooth, 45 to 60 seconds.
- 3
3. Strain the mixture through a fine-mesh sieve into a pitcher, pressing gently to extract the liquid without forcing too much pulp through. Discard or save the pulp for another use.
- 4
4. Add the cold sparkling water to the pitcher and stir gently to keep the bubbles lively. Taste and adjust with a little more lemon juice or sugar if desired.
- 5
5. Fill 4 glasses with the ice. Divide the drink among the glasses and garnish with thin lemon slices and a few tender celery leaves or extra dill if desired. Serve immediately, well chilled, ideally at 38-45°F (3-7°C).
Chef tips
For a more delicate flavor, peel the pear before blending. For a more polished texture, chill the pitcher for 10 minutes before adding the sparkling water.
Substitutions
You can substitute the dill with a smaller amount of fresh tarragon, or use lime instead of lemon for a brighter citrus profile. The sugar can be replaced with simple syrup at the same sweetness level.
