Instructions
- 1
1. Preheat the oven to 220°C / 425°F. Place the carrots on a tray and roast them for 20 to 25 minutes at 220°C / 425°F, until tender with lightly browned edges.
- 2
2. While the carrots roast, lightly crush the cardamom pods and place them in a small saucepan with the water and honey. Warm over low heat for 3 minutes, without bringing to a strong boil, just enough to infuse. Remove from the heat, let stand for 5 minutes, and strain.
- 3
3. Let the roasted carrots cool for 5 minutes at room temperature until warm and easy to blend.
- 4
4. In a blender, combine the roasted carrots, Cara Cara orange juice, cardamom syrup, lemon juice, and salt. Blend with the water until very smooth.
- 5
5. Strain the mixture if you want a finer texture and transfer it to a pitcher. Chill for 10 minutes so it is nicely cold.
- 6
6. Add the chilled plain water kefir to the pitcher and stir gently to keep some of the fizz.
- 7
7. Serve in glasses over ice and garnish with the thin strips of orange zest. Stir lightly before drinking.
Chef tips
For deeper flavor, let some of the carrots develop more color on the edges, but avoid burning them so the drink does not turn bitter.
Substitutions
You can replace the honey with agave syrup for a vegan version. If Cara Cara oranges are unavailable, use regular sweet oranges. Water kefir can be replaced with well-chilled sparkling mineral water for a less fermented profile.
