Instructions

1. Preheat the oven to 220 °C / 425 °F. Place the green grapes on a small tray and roast for 8 to 10 minutes, until some grapes just begin to burst and their juices concentrate. Let cool for 5 minutes.
- 2
2. Meanwhile, place the fresh lemon verbena in a heatproof pitcher with the sugar, lime zest, and fine salt. Pour in the hot water and let steep for 5 minutes.
- 3
3. Strain the infusion to remove the lemon verbena and transfer it to a blender. Add the roasted green grapes with all their juices, the juice of the 2 limes, and 200 g of ice. Blend until smooth.
- 4
4. Strain the blended mixture into a large pitcher to remove skins if you want a finer texture. Add the well-chilled sparkling water and stir gently so it keeps its fizz.
- 5
5. Divide the remaining ice among 4 glasses. Pour the refresher over the ice and garnish with extra lemon verbena leaves. Serve immediately.
- 6
6. If you prefer a more pronounced flavor, chill the still base in the refrigerator for 10 minutes before adding the well-chilled sparkling water and serving.
Chef tips
Roasting the grapes in a single layer helps concentrate their flavor. For a brighter citrus note, rub the lime zest into the sugar before steeping.
Substitutions
You can substitute lemon verbena with lemon balm or fresh mint. The sugar can be replaced with 30 ml (2 tbsp) agave syrup, added after blending. If you do not want carbonation, use the same amount of cold still water.
