1. In a small saucepan, combine the blueberries, water, honey, orange zest, and a pinch of salt. Cook over medium heat for 8 minutes, stirring occasionally, until the fruit softens and releases its juices.
- 2
2. Remove the saucepan from the heat and add the orange juice, vanilla extract, and 4 fresh basil leaves. Let it infuse for 2 minutes.
- 3
3. Blend the mixture with an immersion blender or countertop blender until smooth. For a silkier texture, strain the concentrate to remove the skins.
- 4
4. Let the blueberry concentrate cool until lukewarm or cold. To speed this up, place it in the refrigerator for 5 minutes.
- 5
5. In a blender, add the cooled concentrate, plain yogurt, crushed ice, and the remaining 4 basil leaves. Blend for 30 to 45 seconds until thick and slushy.
- 6
6. Taste and adjust with a little more honey if desired, blending 5 more seconds to combine.
- 7
7. Serve immediately in 4 chilled glasses and garnish with extra basil leaves and a little more orange zest if desired.
Chef tips
For a more granita-like texture, use freshly crushed ice and pre-chilled glasses. If you prefer a lighter drink, add an extra 60 ml (1/4 cup) cold water when blending.
Substitutions
You can replace the honey with agave syrup for a strict vegetarian version. Basil can be swapped for mild mint, and plain yogurt can be replaced with lactose-free or plant-based yogurt, adjusting allergens and tags accordingly.
