Instructions
- 1
Preheat the oven to 220°F / 105°C.
- 2
Place the diced pear on a small baking tray. Sprinkle the ground cardamom, ground cinnamon, and fine salt over the fruit. Roast for 20 minutes at 220°F / 105°C, until the pear is tender and fragrant.
- 3
Remove the tray from the oven and let the roasted pear cool for 5 minutes.
- 4
In a blender, combine the roasted pear, 480 ml (2 cups) water, oat milk, maple syrup, vanilla extract, lemon juice, mint leaves, and 150 g (about 1 1/2 cups) ice. Blend until very smooth.
- 5
Add the remaining 240 ml (1 cup) water and blend briefly again to adjust the texture to a creamy agua fresca consistency.
- 6
Taste and adjust with a little more maple syrup or lemon juice if desired.
- 7
Serve in glasses over the remaining ice and garnish with extra mint leaves.
Chef tips
For a silkier texture, strain the drink after blending. If you prefer a deeper flavor, let the mixture rest in the refrigerator for 10 minutes before serving.
Substitutions
You can replace oat milk with almond milk if you do not need to avoid tree nuts, or use more water for a lighter version. Maple syrup can be swapped for agave syrup.
