Instructions

  1. 1

    1. In a small saucepan, combine the cranberries, water, honey, fresh rosemary, and orange zest. Bring to medium heat and cook for 10 minutes, until the cranberries burst and the liquid turns deeply colored. There is no need to go beyond a gentle simmer; if using a thermometer, the mixture will be near 212°F / 100°C.

  2. 2

    2. Remove the saucepan from the heat and let the mixture rest for 5 minutes so the rosemary can fully infuse the liquid. Discard the rosemary sprigs.

  3. 3

    3. Transfer the mixture to a blender and add the fresh orange juice and lemon juice. Blend until smooth.

  4. 4

    4. Strain the mixture through a fine sieve into a large pitcher to remove cranberry skins and seeds. Let it cool to room temperature, then chill until very cold, ideally around 39-41°F / 4-5°C.

  5. 5

    5. Just before serving, add the well-chilled sparkling water to the pitcher and stir gently to keep the bubbles lively.

  6. 6

    6. Divide the ice among 4 glasses, add the thin orange slices, and pour the drink over the top. Serve immediately.

  7. 7

    7. For a more aromatic presentation, garnish each glass with a small extra sprig of fresh rosemary if desired.

Chef tips

For a deeper flavor, let the strained base rest in the refrigerator for 1 hour before adding the sparkling water. If you prefer a lighter texture, top each glass with a little extra sparkling water.

Substitutions

You can replace the honey with agave syrup for a vegan version. If you do not have fresh rosemary, use 1 small sprig of fresh thyme for a different but equally aromatic profile.
