Instructions
- 1
1. Heat the water in a small saucepan until very hot but not boiling, about 175°F/80°C. Remove from the heat, add the jasmine tea and grated ginger, and steep for 4 minutes.
- 2
2. Strain the infusion to remove the tea and ginger. Add the honey while the infusion is still warm and stir until fully dissolved. Let it cool for 10 minutes, or until room temperature.
- 3
3. Place the cantaloupe, lime juice, salt, half of the mint leaves, and the cooled infusion in a blender. Blend until completely smooth.
- 4
4. Taste the mixture and adjust with a little more honey or lime if desired. For a finer texture, strain the drink through a fine-mesh sieve.
- 5
5. Divide the ice among 4 glasses. Pour in the cantaloupe mixture until each glass is about three-quarters full.
- 6
6. Top each glass with chilled sparkling water and stir gently. Garnish with the remaining mint leaves and serve immediately.
Chef tips
For deeper flavor, chill the melon base for 30 minutes before adding the sparkling water. Do not boil the jasmine tea to avoid bitterness.
Substitutions
You can replace the honey with agave syrup for a vegan version. If you do not have cantaloupe, use a similar orange-fleshed melon. Mint can be swapped for sweet basil for a different profile.
