Instructions
- 1
1. In a small saucepan, combine 125 ml water, sugar, and culinary lavender. Heat over medium heat until it just reaches a simmer, about 95-100 °C / 203-212 °F, stirring until the sugar fully dissolves.
- 2
2. Remove from the heat and let the syrup steep for 8 minutes. Strain out the lavender and let the syrup cool to room temperature.
- 3
3. Place the white peaches in a blender with the remaining 125 ml water, fresh lime juice, lime zest, salt, and the strained lavender syrup. Blend until completely smooth.
- 4
4. For a finer texture, strain the mixture through a fine sieve to remove any peach fiber.
- 5
5. Divide the ice among 4 glasses. Fill each glass about two-thirds full with the peach-lime mixture.
- 6
6. Top with the well-chilled sparkling mineral water just before serving, about 180-190 ml per glass, and stir gently to keep the bubbles lively.
- 7
7. Garnish with thin lime slices and a tiny pinch of additional culinary lavender. Serve immediately while very cold.
Chef tips
Use very ripe peaches for natural sweetness and the best aroma. If the lavender tastes too strong, slightly reduce the amount next time.
Substitutions
You can substitute white peach with white nectarine. The sugar can be replaced with cane sugar. If you do not want carbonation, use still cold water for a softer version.
