Instructions
- 1
1. In a small saucepan, heat 120 ml of the water with the honey over low heat for 5 minutes, just until the honey fully dissolves; do not let it boil. If using a temperature-controlled cooker, keep the mixture near 160°F/70°C. Let it cool for 5 minutes.
- 2
2. Place the green apple, fennel bulb, fresh lime juice, salt, the warm honey syrup, and the remaining 380 ml water in a blender. Blend for 1 to 2 minutes until very smooth.
- 3
3. Strain the mixture through a fine-mesh sieve or nut milk bag, pressing well to extract all the liquid. Discard or save the pulp for another use.
- 4
4. Transfer the strained liquid to a large pitcher and chill for 10 minutes, or until nicely cold. If you want to chill it faster, add some of the ice and stir.
- 5
5. Just before serving, add the cold sparkling water and stir gently to keep the bubbles lively.
- 6
6. Divide the ice among 4 glasses, pour in the drink, garnish with lime slices and the reserved fennel fronds, and serve immediately.
Chef tips
For a deeper flavor, let the fennel sit in the lime juice for 5 minutes before blending. If you prefer a more rustic texture, strain only lightly.
Substitutions
You can replace the honey with agave syrup for a vegan version. If you do not have sparkling water, use regular cold water for a gentler, non-fizzy drink.
