1. In a small saucepan, combine the water, sugar, and fresh sage leaves. Cook over medium heat for 5 minutes, until the sugar fully dissolves and the liquid becomes fragrant. Remove from the heat and let it steep for 5 more minutes.

2. Meanwhile, place the lemon halves cut-side down on a very hot skillet or griddle over medium-high heat. Cook for 2 to 3 minutes, until lightly charred. If using a grill or oven, work at 400°F (200°C) until the lemon is lightly marked.

3. Strain the sage syrup and let it cool for a few minutes. Squeeze the charred lemon and reserve 30 ml (2 tbsp) of juice.
- 4
4. Place the red pear in a blender along with the pomegranate juice, charred lemon juice, sage syrup, and the pinch of salt. Blend until smooth.
- 5
5. For a finer texture, strain the mixture through a fine sieve if desired. Transfer the drink to a large pitcher.
- 6
6. Add the ice to the pitcher and pour in the sparkling mineral water just before serving. Stir gently so the bubbles stay lively.
- 7
7. Serve immediately in 4 glasses with extra ice if desired, and garnish with a fresh sage leaf or a thin slice of pear.
Chef tips
For deeper flavor, chill the pomegranate-pear base in the refrigerator for 30 minutes before adding the sparkling water. This keeps the drink colder without relying only on ice.
Substitutions
You can substitute the red pear with Bartlett or Conference pear. Sage can be replaced with lemon verbena for a more citrusy profile. If you prefer a still drink, use cold water instead of sparkling mineral water.
