Instructions

  1. 1

    1. Wash the apricots, remove the pits, and cut them in halves. Wash the lemon, finely zest it, and squeeze 45 ml (3 tbsp) of juice. Strip the leaves from the fresh thyme.

  2. 2

    2. In a medium saucepan, combine the apricots, water, sugar, lemon zest and juice, thyme leaves, vanilla extract, and fine salt.

  3. 3

    3. Bring the mixture over medium heat until it begins to steam gently, without a hard boil. Cook for 8 to 10 minutes, maintaining an approximate temperature of 185 to 195°F (85 to 90°C), until the apricots are very tender.

  4. 4

    4. Remove from the heat and let it rest for 5 minutes so the thyme and vanilla can further infuse the mixture.

  5. 5

    5. Blend until completely smooth. Then strain through a fine-mesh sieve for a smoother, more refined drink.

  6. 6

    6. Let the base cool to room temperature, then refrigerate until thoroughly chilled, ideally around 39 to 43°F (4 to 6°C).

  7. 7

    7. To serve, divide the ice among 4 glasses. Add the chilled apricot base, about 150 ml (scant 2/3 cup) per glass, and top with the well-chilled sparkling water.

  8. 8

    8. Stir each glass gently. Garnish with thin lemon slices and small fresh thyme sprigs if desired, and serve immediately.

Chef tips

If you prefer a more intense drink, use less sparkling water when serving. For a more aromatic finish, lightly rub the thyme sprigs between your fingers before garnishing.

Substitutions

You can substitute the sugar with the same amount of cane sugar. If you do not have fresh thyme, use 1 g (1 tsp) dried thyme, adding it during cooking and straining very well afterward. Sparkling water can be replaced with plain unsweetened soda water.
