Instructions

  1. 1

    1. Heat 300 ml of water in a small saucepan until hot but not boiling, about 175°F and 80°C. Remove from the heat, add the sencha tea, and steep for 3 minutes. Strain and let it cool.

  2. 2

    2. In a blender, add the green kiwi, green apple, lemon juice, fresh mint leaves, and sugar.

  3. 3

    3. Add the cooled sencha tea infusion, the remaining 500 ml water, and 150 g of ice to the blender.

  4. 4

    4. Blend for 45 to 60 seconds until smooth and thoroughly chilled.

  5. 5

    5. Strain the drink if you want a finer texture, pressing the pulp with a spoon to extract all the liquid.

  6. 6

    6. Serve in 4 glasses with the remaining ice and garnish with extra fresh mint leaves. Stir gently before drinking.

Chef tips

For a deeper flavor, chill the sencha infusion in advance. If you prefer a lighter drink, add an extra 100 to 150 ml of cold water at the end.

Substitutions

You can substitute the sencha with a mild green tea. The sugar can be replaced with agave syrup or honey, although honey would make the recipe no longer vegan.
