Chef tips
For an even silkier texture, freeze the peach cubes for 1 hour beforehand and slightly reduce the ice. Chop the rosemary very finely so it adds aroma without overpowering the drink.
Substitutions
You can substitute the ricotta with soft curd cheese and the yogurt with plain Greek yogurt. If you do not have rosemary honey, use mild regular honey. Oolong tea can be replaced with chilled mild black tea, though the flavor will be bolder.
