Instructions

  1. 1

    1. Place the walnuts in a small skillet and toast them for 2 minutes over medium heat, aiming for a surface temperature of about 250-300°F (120-150°C). Remove and let cool for 1 minute.

  2. 2

    2. Wash the red plums, remove the pits, and cut them into medium pieces.

  3. 3

    3. Add the plums, plain kefir, rolled oats, toasted walnuts, honey, ground cinnamon, vanilla extract, and ice to a blender.

  4. 4

    4. Blend for 45 to 60 seconds until very creamy and smooth. If you prefer a lighter texture, add a little more kefir and blend again for 10 seconds.

  5. 5

    5. Divide the smoothie between 2 glasses and serve immediately.

Chef tips

For an even silkier texture, let the oats soak in the kefir for 5 minutes before blending. Use very ripe plums for a more balanced natural sweetness.

Substitutions

You can replace the honey with maple syrup. If you do not have walnuts, use hazelnuts or almonds, keeping in mind the final flavor will change.
