Instructions

  1. 1

    1. Place the walnuts in a small skillet and toast them for 2 minutes over medium heat, stirring often, until fragrant. If you prefer using the oven, toast them at 350°F (175°C) for 4 to 5 minutes. Let them cool for 1 minute.

  2. 2

    2. Add the apricots, frozen banana, Greek yogurt, milk, toasted walnuts, honey, cinnamon, cardamom, ginger, vanilla, and ice cubes to the blender jar.

  3. 3

    3. Blend for 45 to 60 seconds, until completely smooth and creamy. If the smoothie is too thick, add a little more milk and blend again.

  4. 4

    4. Taste and adjust the honey or cinnamon if desired. Serve immediately in two chilled glasses.

Chef tips

For deeper flavor, use very ripe apricots and chill the glasses before serving. For an extra silky texture, blend the milk with the walnuts for 20 seconds first, then add the remaining ingredients.

Substitutions

You can replace the honey with maple syrup for a no-honey version. Greek yogurt can be swapped for thick plain yogurt, and milk for oat or almond milk; note that this will change allergens and dietary tags.
