Instructions
- 1
Toast the rolled oats in a small skillet over medium heat for 2 minutes, stirring often, until fragrant. If checking the surface with a thermometer, keep the heat around 300°F to 320°F (150°C to 160°C). Remove and let cool for 1 minute.
- 2
Place the persimmon, mandarin, oat milk, cashews, toasted rolled oats, fresh ginger, honey, ground cinnamon, and ice into a blender.
- 3
Blend for 45 to 60 seconds, until very smooth and creamy. If you prefer a thinner texture, add a little more oat milk and blend again for 10 seconds.
- 4
Taste and adjust sweetness with a little more honey if desired, then blend briefly to combine.
- 5
Serve immediately in 2 chilled glasses.
Chef tips
For an even silkier texture, soak the cashews in cold water for 20 minutes and drain before blending. Use very ripe persimmon for the best natural sweetness and color.
Substitutions
You can replace the honey with maple syrup for a vegan version. Oat milk can be swapped for almond milk or cold water, and cashews can be replaced with macadamias or sunflower seeds for a different profile.
