Instructions

  1. 1

    1. Place the rolled oats in a small skillet and toast over medium-low heat for 2 minutes, stirring constantly until lightly nutty and dry. If you prefer the oven, toast them at 300°F / 150°C for 4 to 5 minutes. Let cool for 1 minute.

  2. 2

    2. Wash the fresh figs, remove the stems, and cut them into quarters. Peel the orange and separate it into segments, removing any seeds.

  3. 3

    3. Add the figs, orange, plain kefir, toasted oats, white tahini, honey, ground cinnamon, vanilla extract, and ice to the blender jar.

  4. 4

    4. Blend for 45 to 60 seconds, until very creamy and smooth. If you want a lighter texture, add a small splash of extra kefir and blend again for 10 seconds.

  5. 5

    5. Taste and adjust sweetness with a little more honey if needed. Serve immediately in two glasses and finish with an extra pinch of ground cinnamon on top.

Chef tips

For an even smoother texture, partially peel the figs if their skin is thick. Use very cold kefir so the smoothie stays thick without needing too much ice.

Substitutions

You can swap the honey for maple syrup for a vegan version if you also replace the kefir with a fermented plant-based drink. White tahini can be replaced with almond butter, keeping in mind that the allergen profile will change.
