Instructions

  1. 1

    1. Wash the ripe fresh figs, remove the stems, and cut them into quarters for smoother blending.

  2. 2

    2. Peel the orange, separate it into segments, and remove any seeds if needed.

  3. 3

    3. Add the figs, orange, plain Greek yogurt, tahini, milk, honey, ground cinnamon, vanilla extract, and ice cubes to a blender.

  4. 4

    4. Blend for 45 to 60 seconds until very smooth and creamy. If you prefer a thinner texture, add a little more milk and blend again for 10 seconds.

  5. 5

    5. Serve immediately in 2 glasses and finish with finely grated orange zest on top, if using.

  6. 6

    6. For an extra-chilled presentation, chill the glasses for 1 minute in the freezer before serving; keep the freezer at about 0 °F (-18 °C).

Chef tips

For an even silkier texture, use very ripe figs and well-chilled yogurt. If the figs have thicker skins, you can strain the smoothie after blending.

Substitutions

You can replace the honey with maple syrup for a different sweetness, and swap the milk for oat or almond milk; keep in mind this will change the allergens and dietary tags.
