Instructions

  1. 1

    1. Toast the white sesame seeds in a small skillet over medium heat for 2 to 3 minutes, stirring constantly, until fragrant and just lightly golden. If monitoring surface heat, aim for about 300°F to 320°F (150°C to 160°C). Remove and let cool for 1 minute.

  2. 2

    2. Add the mandarin segments, cubed papaya, plain yogurt, milk, honey, vanilla extract, ice, and toasted sesame seeds to a blender.

  3. 3

    3. Blend for 45 to 60 seconds, until completely smooth and creamy. If you prefer a lighter texture, add a little more milk and blend again for 10 seconds.

  4. 4

    4. Taste the smoothie and adjust with a little more honey if you want it sweeter.

  5. 5

    5. Serve immediately in 2 chilled glasses to keep the texture thick and refreshing.

Chef tips

For an even colder, thicker texture, freeze the papaya cubes for 1 hour before blending. Toast the sesame carefully so it adds aroma without bitterness.

Substitutions

You can replace the milk with oat milk or almond milk, though this will change the allergens and dietary tags. Honey can be replaced with maple syrup for a no-honey version.
