Instructions

  1. 1

    1. Toast the pecans in a small skillet over medium heat for 2 to 3 minutes, stirring often until fragrant. If you prefer using the oven, toast them at 325°F / 160°C for 4 to 5 minutes. Let them cool for 2 minutes.

  2. 2

    2. Place the saffron threads in the hot water and let them steep for 3 minutes to release their color and aroma.

  3. 3

    3. Add the pear, red grapes, Greek yogurt, milk, honey, toasted pecans, the saffron infusion with its liquid, and the ice to a blender.

  4. 4

    4. Blend for 45 to 60 seconds until very smooth and creamy. If it is too thick, add a little more milk and blend again.

  5. 5

    5. Serve immediately in 2 glasses and finish with the ground cinnamon on top.

Chef tips

For a silkier texture, peel the pear before blending. For a more aromatic presentation, reserve a few drops of the saffron infusion to decorate the top.

Substitutions

You can substitute the pecans with walnuts if needed. Honey can be replaced with maple syrup, although the flavor profile will change. For a lighter texture, use regular plain yogurt instead of Greek yogurt.
