Instructions

  1. 1

    1. Soak the cashews in cold water for 10 minutes. Drain them well before using.

  2. 2

    2. Peel the cucumber and cut it into cubes. Core the green apple and cut it into cubes as well.

  3. 3

    3. In a blender, add the cucumber, green apple, drained cashews, oat milk, lime juice, fresh dill, maple syrup, ice, and fine salt.

  4. 4

    4. Blend for 1 to 2 minutes, until completely smooth, creamy, and chilled.

  5. 5

    5. Taste the smoothie and adjust with a little more maple syrup or a few extra drops of lime if you want to balance sweetness and acidity.

  6. 6

    6. Serve immediately in chilled glasses. If you prefer it extra refreshing, chill the glasses for 5 minutes in the refrigerator at 39 °F / 4 °C before serving.

Chef tips

For an even silkier texture, blend the cashews with the oat milk for 30 seconds first, then add the remaining ingredients.

Substitutions

You can substitute the oat milk with unsweetened coconut milk for a gluten-free version, and replace dill with fresh mint for a fresher, sweeter profile.
