Instructions

  1. 1

    1. Toast the rolled oats in a small skillet over medium heat for 2 to 3 minutes, stirring often, until fragrant and lightly golden. If you prefer a temperature reference, a skillet surface over medium heat is usually around 320 to 356 °F / 160 to 180 °C. Let cool for 2 minutes.

  2. 2

    2. Add the diced mango, yellow bell pepper, kefir, toasted oats, thyme honey, lemon juice, cold water, ice, fresh thyme leaves, and the pinch of salt to a blender.

  3. 3

    3. Blend on high speed for 45 to 60 seconds, until very smooth and creamy. If the smoothie is too thick, add a little more cold water and blend again for 10 seconds.

  4. 4

    4. Taste and adjust, if desired, with a few more drops of lemon juice or a little more thyme honey to balance sweetness and brightness.

  5. 5

    5. Serve immediately in two chilled glasses and, if desired, garnish with a few extra fresh thyme leaves on top.

Chef tips

For a silkier texture, peel the yellow bell pepper with a vegetable peeler before blending. For a colder smoothie without diluting it, freeze part of the mango beforehand.

Substitutions

You can substitute the kefir with plain drinkable yogurt, though the tang will change slightly. Thyme honey can be replaced with mild honey or maple syrup. If you need a gluten-free version, use certified gluten-free oats.
