Instructions

  1. 1

    1. Wash the kiwi, pear, cucumber and dill. Peel the 2 kiwis, remove the pear core and cut it into cubes, peel the 1/2 cucumber and slice it.

  2. 2

    2. Place the kiwi, pear, cucumber, plain kefir, plain Greek yogurt, lemon juice, honey and fresh dill into a blender.

  3. 3

    3. Add the ice and blend for 45 to 60 seconds, until very smooth and creamy.

  4. 4

    4. Taste the smoothie and adjust with a little more honey or a few extra drops of lemon juice if you want to balance sweetness and acidity.

  5. 5

    5. Serve immediately in 2 chilled glasses. For an extra refreshing result, chill the glasses for 5 minutes in the refrigerator at 39 °F / 4 °C before serving.

Chef tips

Use very cold fruit for a thicker result without needing too much ice. For an even silkier texture, blend the cucumber with the kefir first, then add the remaining ingredients.

Substitutions

You can replace the pear with a mild green apple for a tangier profile. Dill can be replaced with fresh mint in a smaller amount. If you do not have kefir, use plain drinkable yogurt, though the flavor will change slightly.
