Instructions

  1. 1

    1. Place the dried hibiscus flowers and water in a small saucepan. Bring nearly to a simmer over medium heat until it reaches about 195°F / 90°C, turn off the heat, and let steep for 3 minutes. Strain and chill until you have 120 ml (1/2 cup) of concentrated cold hibiscus tea.

  2. 2

    2. If the cashews are not yet soaked, cover them with hot water at about 140°F / 60°C for 10 minutes, then drain well.

  3. 3

    3. Add the frozen raspberries, pomegranate arils, soaked cashews, chilled hibiscus tea, oat milk, vanilla extract, maple syrup, chia seeds, and ice to a blender.

  4. 4

    4. Blend for 45 to 60 seconds until very smooth and creamy. If you prefer a lighter texture, add an extra 30 to 60 ml (2 to 4 tbsp) oat milk and blend again.

  5. 5

    5. Taste and adjust sweetness with a little more maple syrup if needed. Serve immediately in two glasses and garnish with a few pomegranate arils if desired.

Chef tips

For an even silkier texture, blend the liquids with the cashews first for 20 seconds before adding the frozen fruit. For a deeper color, use a well-concentrated hibiscus infusion that is fully chilled.

Substitutions

You can replace the oat milk with almond milk or coconut milk if you want to avoid possible gluten traces found in some oat brands. Maple syrup can be swapped for honey if you do not need a vegan version. Raspberries can be replaced with blackberries for a darker, earthier profile.
