Instructions

  1. 1

    1. Place a small skillet over medium heat and toast the rolled oats for 2 minutes, stirring constantly, until fragrant. If you prefer using the oven, toast them for 2 to 3 minutes at 350°F (175°C). Let cool for 1 minute.

  2. 2

    2. Add the pitted cherries, ricotta, toasted oats, cold milk, honey, lime zest, lime juice, vanilla extract, and ice to a blender.

  3. 3

    3. Blend for 45 to 60 seconds until smooth, creamy, and fully combined. If the smoothie is too thick, add a little more milk and blend again for a few seconds.

  4. 4

    4. Taste and adjust with a bit more honey or a few extra drops of lime juice if you want it sweeter or brighter.

  5. 5

    5. Serve immediately in 2 chilled glasses and, if desired, garnish with an extra pinch of lime zest.

Chef tips

For an even silkier texture, blend the milk with the toasted oats for 20 seconds before adding the remaining ingredients.

Substitutions

You can substitute ricotta with creamy cottage cheese or Greek yogurt, and swap the honey for maple syrup if you prefer a different sweetness.
