Instructions

  1. 1

    1. Place the carrot in a small saucepan with enough water to cover it and cook over medium heat for 10 to 12 minutes, until tender. The water should stay at a gentle simmer, about 195-205°F (90-96°C). Drain and let it cool for 5 minutes.

  2. 2

    2. Add the cooked carrot, mandarin, soaked and drained cashews, plain yogurt, oat milk, vanilla extract, honey, and ground cinnamon to the blender jar.

  3. 3

    3. Blend for 45 to 60 seconds until very smooth and creamy.

  4. 4

    4. Add the ice and blend again for 20 to 30 seconds, until the smoothie is chilled and frothy.

  5. 5

    5. Taste and adjust with a little more honey if you want a sweeter profile. Serve immediately.

Chef tips

For an even smoother texture, blend the cashews with the oat milk for 20 seconds before adding the remaining ingredients.

Substitutions

You can substitute mandarin with clementines, honey with maple syrup, and plain yogurt with plant-based yogurt for a dairy-free version. If using another plant milk, adjust the amount to keep the texture balanced.
