Instructions

  1. 1

    1. Steam the carrot for 4 minutes until tender but not mushy. If using an electric steamer or a covered pot, cook over medium heat with water at about 212°F/100°C. Let it cool for 2 to 3 minutes.

  2. 2

    2. Add the peach, cooked carrot, plain yogurt, milk, rolled oats, honey, ground ginger, ground cinnamon, and vanilla extract to a blender.

  3. 3

    3. Blend for 45 to 60 seconds until completely smooth and creamy.

  4. 4

    4. Add the ice and blend again for 20 to 30 seconds, just until the smoothie is cold and lightly frothy.

  5. 5

    5. Taste and adjust with a little more honey if desired. Serve immediately in 2 chilled glasses.

Chef tips

For deeper flavor, chill the peach and yogurt beforehand. For an even silkier texture, blend the oats with the milk for 30 seconds before adding the remaining ingredients.

Substitutions

You can replace the honey with maple syrup for a honey-free version. Peach can be swapped for nectarine, and milk for oat beverage if you want a dairy-free version, using plant-based yogurt as well.
