- 3
3. Blend for 45 to 60 seconds, until the mixture is very smooth, cold, and creamy. If you prefer a lighter texture, add a little more cold water and blend again for 10 seconds.
- 4
4. Taste the smoothie and adjust with a few extra drops of lemon juice for more brightness or a bit more honey for a sweeter profile.
- 5
5. Serve immediately in chilled glasses. For a more elegant finish, garnish with a very thin fennel shaving or half a white grape.
Chef tips
For an even creamier texture, chill the pear and grapes for at least 30 minutes before making the smoothie. If your blender is less powerful, add the kefir and water first to help everything blend smoothly.
Substitutions
You can replace kefir with plain drinkable yogurt, though the texture will be slightly thicker. Honey can be swapped for maple syrup, or omitted entirely if the fruit is sweet enough.
