Instructions

  1. 1

    Preheat the oven to 200 °C / 400 °F.

  2. 2

Place the pear on a small baking tray, sprinkle with the cinnamon, and roast for 18 to 20 minutes at 200 °C / 400 °F, until tender and lightly golden.

  3. 3

Let the roasted pear cool for 5 minutes so it does not warm the smoothie too much.

  4. 4

Add the roasted pear, white grapes, plain yogurt, milk, oats, honey, ground cardamom, lemon juice, and ice to a blender.

  5. 5

Blend for 45 to 60 seconds until very smooth and creamy.

  6. 6

Taste and adjust with a little more honey if you prefer it sweeter.

  7. 7

Serve immediately in two chilled glasses.

Chef tips

For a thicker smoothie, freeze the grapes for 2 hours before blending. If you want an even silkier texture, peel the pear after roasting it.

Substitutions

You can replace the milk with oat drink and the plain yogurt with plant-based yogurt for a dairy-free version. Honey can be replaced with maple syrup.
