1. Wash the green apple, remove the core, and cut it into cubes. Wash and dry the fresh spinach well. Squeeze the lime to get the juice and finely grate the green part of the peel for the zest.

2. Add the green apple, fresh spinach, plain coconut yogurt, coconut milk beverage, shelled pistachios, lime juice, lime zest, honey, and ice to a blender.
- 3
3. Blend for 45 to 60 seconds, or until completely smooth, creamy, and evenly colored. If you prefer a lighter texture, add 30 to 60 ml more coconut milk beverage, equal to 2 to 4 tbsp, and blend again.

4. Taste the smoothie and adjust with a little more honey if you want it sweeter, or a few extra drops of lime juice for more brightness.
- 5
5. Serve immediately in two chilled glasses to keep its thick texture and vibrant flavor.
Chef tips
For a brighter color, use baby spinach. If you want an even colder, thicker texture, freeze part of the green apple cubes for 30 minutes beforehand.
Substitutions
You can replace the honey with maple syrup for a vegan version. Pistachios can be replaced with cashews, though the flavor will be less toasty and milder.
