Instructions

  1. 1

    1. For deeper coconut flavor, toast the shredded coconut in a dry skillet over medium heat for 1 to 2 minutes, stirring constantly until golden and fragrant. If using the oven, toast it at 325°F (160°C) for 3 to 5 minutes. Let it cool.

  2. 2

    2. Add the frozen blackberries, banana, coconut yogurt, coconut milk beverage, lime juice, rolled oats, fresh mint leaves, and maple syrup to a blender.

  3. 3

    3. Add the ice and blend for 45 to 60 seconds, or until completely smooth and creamy.

  4. 4

    4. Taste and adjust: add a few extra drops of lime for more brightness or a little more maple syrup if you want it sweeter. Blend again for 10 seconds.

  5. 5

    5. Pour immediately into 2 glasses and finish with the toasted shredded coconut on top. Garnish with a mint leaf if desired.

Chef tips

For a thicker texture, freeze the banana slices beforehand. If your blender is not very powerful, let the oats soak in the coconut milk beverage for 5 minutes before blending.

Substitutions

You can replace the blackberries with blueberries or a mixed berry blend. The coconut milk beverage can be swapped for oat milk, although it would no longer be gluten-free unless certified. Coconut yogurt can be replaced with almond-based yogurt, keeping tree nut allergen considerations in mind.
