Instructions

  1. 1

    1. Place the raw cashews in a bowl with hot water for 2 minutes to soften them. If heating the water, bring it only to hot, about 140°F/60°C, then drain the cashews.

  2. 2

    2. Wash the seedless red grapes and the ripe red plum. Remove the pit from the plum and cut it into pieces.

  3. 3

    3. Add the red grapes, plum, plain Greek yogurt, soaked and drained cashews, milk, honey, dried culinary lavender, lemon juice, and ice cubes to a blender.

  4. 4

    4. Blend for 45 to 60 seconds until very creamy, cold, and smooth. If you prefer a lighter texture, add a little more milk and blend again for 10 seconds.

  5. 5

    5. Taste the smoothie and adjust with a little more honey if you want a sweeter profile.

  6. 6

    6. Serve immediately in 2 glasses and, if desired, finish with chopped cashews and a tiny pinch of dried culinary lavender on top.

Chef tips

Use culinary lavender sparingly so it adds a floral aroma without overpowering the fruit. If the grapes are very sweet, you can reduce the honey.

Substitutions

You can replace the milk with almond or oat drink, and the Greek yogurt with plant-based yogurt for a dairy-free version. Honey can be replaced with maple syrup.
