Instructions

  1. 1

    1. Toast the walnuts in a small skillet over medium heat for 2 to 3 minutes, stirring often, until fragrant. If you prefer using the oven, toast them at 350°F (175°C) for 4 to 5 minutes. Let them cool for 2 minutes.

  2. 2

    2. Add the ripe persimmon, pear, plain yogurt, milk, toasted walnuts, honey, grated fresh ginger, and ground cinnamon to a blender.

  3. 3

    3. Add the ice and blend for 45 to 60 seconds, until the smoothie is completely smooth, creamy, and free of visible fruit or nut pieces.

  4. 4

    4. Taste and adjust with a little more honey if you want it sweeter, or an extra splash of milk if you prefer a thinner texture. Blend again for 10 more seconds.

  5. 5

    5. Serve immediately in 2 chilled glasses. If desired, garnish with an extra pinch of cinnamon or a few walnut crumbs on top.

Chef tips

Use a very ripe persimmon for better natural sweetness and a more velvety texture. Chill the glasses for 10 minutes before serving so the smoothie stays cold longer.

Substitutions

You can replace the milk with oat or almond milk, although allergens and dietary tags will change. Honey can be replaced with maple syrup. Walnuts can be swapped for pecans.
