2. Place the diced red apple on a small oven-safe tray and roast for 18 minutes at 200 °C / 400 °F, until tender and lightly caramelized around the edges.
- 3
3. Remove the apple from the oven and let it cool for 5 minutes so it does not melt the ice or overly warm the yogurt.

- 5
5. Blend for 45 to 60 seconds until very smooth and creamy. If you prefer a lighter texture, add a little more milk and blend again.
- 6
6. Taste and adjust with a bit more honey or an extra pinch of cinnamon if desired.
- 7
7. Serve immediately in 2 glasses and finish with a light dusting of ground cinnamon on top.
Chef tips
For an even thicker texture, freeze the banana slices for 1 hour beforehand. If you want a deeper flavor, roast the apple until the edges are nicely browned, but not burnt.
Substitutions
You can replace the milk with oat or almond milk for a dairy-free version, using plant-based yogurt as well. Honey can be swapped for maple syrup. If you do not have white miso, use a very small pinch of salt, though the smoothie will lose some of its unique character.
